Ingredients
  • 1 tbsp olive oil
  • 1/2 cooking onion
  • 1 lb slices chicken breat (boneless and skinless)
  • 1/3 cup yellow curry paste
  • 10 small yukon potatoes (cut about the same size)
  • 1 can coconut milk
  • 2 tsp fish sauce
  • 1/2 red bell pepper (sliced)
  • 185 g baby corn (canned)
Instructions

    Heat oil in large pan.

    Add onions, chicken breast and curry paste to the pan.
  • 3
    Add potatoes to curry mixture.
  • 4
    Add coconut milk and bring to a simmer.
  • 5
    Once chicken and potatoes are almost cooked add fish sauce and brown sugar.

    Once the potatoes are tender, add red bell pepper and baby corn. Simmer for another 5 minutes, remove from heat and serve.
