Ingredients
Meatballs
  • 1 pk fresh mozzarella (226g)
  • 500 g lean ground pork
  • 500 g lean ground beef
  • 1 lg onion (chopped)
  • 3 garlic gloves (diced)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 tsp chipotle chile pepper
  • 1 tsp thyme
  • 1 tsp pepper
  • 1 tsp salt
Tomato Sauce
  • 1 med onion (diced)
  • 4 cloves garlic
  • 1 bay leaf
  • salt & pepper to taste
  • 1 jar marinara
Finish
  • 1 cup 3 cheese shredded (mozzarella, provolone, cheddar)
  • 3 tbsp Parmesan cheese (grated)
  • 6-8 leaves fresh basil
Instructions

    Heat skillet on high heat. Add olive oil, onions and garlic. Cook until soft and fragrant. Once ready set aside to allow it to cool.

    Add milk and breadcrumbs to a medium size bowl and mix together. Add herbs, salt and pepper then mix well. Set aside an allow breadcrumbs to soak.

    In another large bowl, mix pork, beef and onions.

    Form fist size meatball and add mozzarella cheese to the center of the meatball and place on a lined baking tray.

    Brown the meatballs in a large cast iron pan (or skillet) on medium to high heat, then remove and set aside.
Tomato Sauce
  • 1
    Reuse some of the oil to the pan you used for the meatballs. Add onions and garlic, cook them until soft and fragrant. Add the marinara sauce, tomato paste, bay leaf, salt and pepper for taste. Allow the sauce to simmer for around 5-7 minutes.

    While the sauce is cooking, pre-heat the oven to 400°F.

    Place meatballs into the marinara sauce top with all the cheese and basil then place pan into the oven. Allow the meatballs to bake for 10 minutes then remove from the oven (or when cheese is melted and brown).

    Remove from the oven and top with fresh basil (optional).
