Ingredients
Short Ribs
  • 4 Beef Short Ribs (bone-in)
  • 2 tsp salt
  • 2 tsp ground black pepper
  • 2-3 tbsp olive oil
  • 1 cup onion (diced)
  • 5 sprig thyme (bunched)
  • 2 bay leaves (dried)
  • 1 cup carrot (diced)
  • 1 cup celery (diced)
  • 3 cloves garlic (minced)
  • 2 ½ cups red wine (full body)
  • 1 can crushed tomatoes (you can use diced tomatoes also)
  • 2 tbsp tomato paste
  • 1 cup beef broth
Gnocchi
  • 1 pack Gnocchi (bought in local grocery store)
Instructions
Short Ribs
  • 1
    Heat up skillet on high heat.
  • 2
    Prepare short ribs by rubbing olive oil, salt and pepper on all sides.

    Add olive oil to skillet and sear short ribs on all sides until brown. (Olive oil should be smoking a little before adding short ribs for searing).

    Remove short ribs and place in slow cooker.

    Heat up another skillet and add olive oil, onions, garlic, celery, carrots and cook until slightly tender.

    Add the red wine and allow to simmer for at least 10 minutes or reduce by half. Remove from heat and add to slow cooker.

    Add crushed tomatoes, tomato paste, by leaves and thyme to the slow cooker. Once cooked vegetables are ready, add those to slow cooker also.

    Slow cook for at least 8 hours or until desired tenderness.
Gnocchi
  • 1
    Boil water on high heat and add salt. Once water is boiling add package of Gnocchi to boiling water.

    Gnocchi is ready once they start to float. ENJOY!
