No Bake Chocolate Pumpkin Pie
Servings: 6 servings
- 15 oz pumpkin purée (or 1 can)
- 1 tsp pure vanilla extract
- 1-2 tsp cocoa powder
- 1/4 tsp salt (leveled)
- 1 cup chocolate chips
- sweetener of choice, to taste
Melt chocolate chips and coconut oil in a microwave. Tip: Warm up in intervals (give a stir every 15 seconds), as chocolate can burn if kept in the microwave too long.
Add all the ingredients to a blender and mix till smooth.
Smooth onto a pie crust.
Chill in fridge.
Finish with icing sugar. Enjoy!
